I don't usually bake all that much aside from birthdays and Christmas. My mother has a 90-year-old friend, who really enjoyed the cheesecake and since my mum is bringing her some groceries today I thought I'd make her some more cake, too. Somehow I hope that there will be somebody who will bring the occassional cake when I am 90.

Since you all seemed to like the cheesecake I bring you: Cherry Marzipan cake. With streusel.

I tried to try out how much everything is in cups this time but it was always something like 3 cups and an indefinable amount, so I wll just stick with the metric measurements.
Crust/Streusel:
- 400 g Flour
- 100 g ground Hazelnuts
- 2 Eggs
- 100 g Sugar
- 1 dash of Salt
- Cinnamon to taste
- 225 g Butter
- Bitter Almond Oil
- 200 g Marzipan
Filling:
- 200 g Creme Fraiche
- 1 Tablespoon Sugar
- Vanilla Custard Powder for half a litre of Milk (in Europe: one sachet:))
- 2 glasses of pitted Sour Cherries (one glass has about 350-400 g cherries, so let's say 750 g in total, if you use fresh ones?)
- 200 g Sour Cherry Jam
Cut butter and marzipan into small-ish pieces:

Soften in Microwave. Add eggs, hazelnuts, a few drops of bitter almond oil, cinnamon, mix well:

Meanwhile, drain cherries well, if using the kind that come in a glass :)

Add flour to the mixture and quickly mix to form streusel using the dough hooks with your mixer or your hands:

1/3 of the dough is reserved for the streusel topping, the rest should be devided 2/3 for the bottom of the crust and 1/3 for the side:

Mix creme fraiche, custard powder and sugar, spread on bottom of crust:

Mix cherries with jam and spread on top of the creme fraiche mix.

Sprinkle streusel over cherries, if dough is too compact, just tear off small pieces:

Bake in a preheated oven for 35 minutes at 175 degrees Celsius (ca. 345 degrees Fahrenheit) for a fan/convection oven or 185 degrees Celsius (365 degrees Fahrenheit) for a conventional electric oven.
It's a good idea to put some baking paper underneath the springform, the cherry juices might leak.
